- “Montecucco” with the unique flavour from the slopes of the Amiata Mountain (Vino Montecucco DOC);
- “Monteregio di Massa Marittima” where to toast with the Vino Monteregio DOC.
Traveling around Maremma you can find beautiful farms full of history and produce quality organic products. These include meat from the typical Maremmana cattle and cold cuts from Macchiaiola and Cinta Senese pigs; extra virgin olive oil like Seggiano DOP; and cheese of the calibre of Pecorino Toscano DOP. And then there are also the products from the water, such as fresh fish from the sea around Monte Argentario and the precious bottarga (cured fish roe) from Orbetello Lagoon.

In both restaurants, Chef Lombardelli uses only genuine products that come from small, carefully selected farms from Maremma Tuscany. These include Azienda Biologica Rustici and Caseificio Il Fiorino.
Biologica Rustici has 50+ years of history in breeding pigs and dairy and meat cattle. For the past 20 years, it has been producing exclusively certified organic products – not only meat but also organic extra virgin olive oil, yoghurts, and rustic sauces.
Caseificio Il Fiorino has won awards and recognitions at an international level, yet this dairy maintains the craftsmanship that is typical of Maremma. It produces renowned products such as Pecorino Riserva del Fondatore, Pecorino Grotta del Fiorini and Cacio di Caterina.

For the wine lists at Dama Dama and Club House, Restaurant Manager and Sommelier Nicola Alocci has selected some of the most prestigious and renowned Maremma wineries, such as Rocca di Frassinello, Tenuta L’Ammiraglia – Frescobaldi, Morisfarms, ColleMassari, Rocca di Montemassi and Monteverro – but also small niche gems like Poggio Cagnano, Celestina Fé, Tenuta Monteró, Casavyc and Provveditore. These are all wineries from the so-called Maremma Grossetana (historically known as the Maremma Senese), which is today simply referred to as Maremma and includes all the villages and towns in the province of Grosseto.
